Hi,
My name is Spencer King.
I am a student at Marywood University, in the Department of Nutrition and Dietetics with the intention of completing the dietetic internship(DI) and becoming a registered dietitian nutritionist(RDN). This site will serve as a platform to share selected works from my studies as well as my interests, both inside and outside of school.
My professional interests include; the importance of human nutrition in our health, sports performance, and environmental impacts in addition to food chemistry. With specific interests in; the interaction of food and our genome also called nutrigenomics, food/nutrient drug interactions, and the role nutrition plays in mental disorders such as depression or anxiety, or managing chronic diseases such as diabetes, cardiovascular disease. Additionally, I am interested in the growing body of evidence regarding the microbiome and the role our food choices play in its modulation.
My extra-curricular activities and interests include; cooking, weightlifting, mountain biking, and ski coaching. I have 9 years experience coaching skiing at several mountains located in Pennsylvania, and Vermont. I recently obtained the highest level of certification(level 3) through the Professional Ski Instructors of America(PSIA). I have previously served as the strength and conditioning coach for a local high school varsity/junior varsity swimming and diving team.
I am currently employed at Pennsylvania Ambulance as an EMT-B. Through this, I have had the opportunity to engage with and assess patients on a daily basis. The field of pre-hospital care has allowed me to observe, or participate in a variety of healthcare settings from hospital based locations such as; cardiac cath labs, med surg floors, ICU/NICU and emergency departments, to dialysis centers, long term care facilities, home care and hospice care.
